FRUIT SALAD RECIPE FOR TWO!
A delicious fruit salad recipe for two is a Strawberry Salad Recipe that will appeal to your sweet tooth!
STRAWBERRY SALAD RECIPE WITH KIWI, POMEGRANATE AND CREME FRAICHE DIPPING SAUCE!
RECIPE INGREDIENTS: 1 Box of Strawberries, 6 Kiwi Fruit, 1 Pomegranate and Creme Fraiche Sauce.
Start with the creme fraiche dipping sauce since it will need 24 hours to settle...totally worth the time for this dish.

CREME FRAICHE RECIPE!
RECIPE INGREDIENTS: 1 Cup of 35% Cream, 1/8 Cup of Butter Milk, *Orange Zest, Freshly Squeezed Juice from 1 Orange, a Sqeeze of Lemon Juice and a Pinch of Salt.
Simply put all of the above ingredients into a bowl at once and mix well with a spatula. Then pour into two side dishes for dipping or spooning onto the salad later and let settle at room temperature for 24 hours.
*For Orange Zest - Wash the orange first and dry. Over a bowl, zest the skin around the outside of the orange with the small holes side of a grater.
STRAWBERRY SALAD PREPARATION: Wash the strawberries thoroughly and cut lengthwise into slices!
Peel the skin from the kiwi fruit with a knife and cut both ends off.
Holding the fruit upright, carefully cut downward all around the outside of the peeled kiwi. Next lay the kiwi on their sides and cut into slices about 1/8” thick.
Now slice the pomegranate in half. Take one half, hold it face downward over a large bowl and tap the back of the pomegranate with the back of a large spoon.
The pomegranate seeds should fall into the bowl along with some bits of white pith. Repeat with the other pomegranate half. Remove the pith and save the seeds in a smaller bowl.
POMEGRANATE KIWI STRAWBERRY SALAD RECIPE LAYOUT!
On two plates, place a layer of kiwi in a circle like a collapsed set of dominoes. Make a smaller circle of strawberries on top of the kiwi base in the same manner.
Fill the center of each with pomegranate seeds and sprinkle the rest of the seeds artistically around the outside of the plate. Spoon some creme fraiche sauce on the salad and you're ready to enjoy!

This salad recipe for two is the 2nd of our Cucumber Salad Recipes from the Healthy Is Wealthy collection of Free Salad Recipes!
DILL CUCUMBER SALAD RECIPE INGREDIENTS:
3 Fresh Dill Sprigs, 3 Tbsp of Chopped Dill, 1 Whole Cucumber
and 1 Half of a Small Red Onion.
Dill Cucumber Salad Preparation:
First cut off both ends of the onion and then slice the rest of the onion into thin strips (this is called onions julienne).
Now take the whole cucumber and cut lengthwise into four quarters, then remove the seeds by carefully slicing downward between the flesh and seeds. With the skin side up, cut the cucumber strips on the bias (45 degrees) into 2 inch segments.
Place the onion julienne, cucumber segments and chopped dill in a bowl. Next add the rice wine vinaigrette (see recipe below). Toss the entire ingredients well, then add some salt and pepper to your taste.
Decorate the top of the Cucumber Salad with Dill Sprig and it’s ready to serve 2.
RICE WINE VINAIGRETTE RECIPE FOR DILL CUCUMBER SALAD!
1/4 Cup of Rice Wine Vinegar, 1 Tbsp of White Sugar, 3/4 Cups of Olive Oil (or Canola Oil), 2 Tbsp of Chopped Dill, 1 Tbsp of Kosher Salt and 1/2 Tbsp of Black Pepper.
Mix all the above ingredients together (except the olive oil) in a blender. With your blender still running, slowly pour in the olive oil and then add salt and pepper to your taste.

ANOTHER WEIGHT WATCHERS RECIPE FOR TWO!
A Red Beet Salad Recipe with Goat Cheese and Sherry Vinaigrette, also from the Healthy Is Wealthy Collection of Free Online Recipes!
RED BEET SALAD RECIPE INGREDIENTS:
8 Medium Size Red Beets, 1 Tbsp. of Cider Vinegar, 1 Bay Leaf,
1 Sprig of Parsley, 1 Sprig of Thyme, Fresh Basil, 1 Bunch of Chives, 2 Shallots Chopped, 2 Tbsp. of Sherry Vinegar, 3 Tbsp. of Extra Virgin Olive Oil, 1 Small Pkg. of Goat Cheese, Fresh Ground Black Pepper & Salt to Your Taste.
SALAD PREPARATION:
In a pot, place the red beets, a bay leaf, sprig of thyme, sprig of parsley, 1 tbsp. of cider vinegar, salt to your taste, and let simmer until fork tender.
When ready, allow to cool, then take a cloth and rub around the outside of the beets until the skin falls away.
Now cut the beets into thin slices about 1/8 inch, in rounded and flat pieces, then place in a bowl.
Season with sherry vinegar, extra virgin olive oil, chives, fresh black pepper and salt to your taste.
Next add the chopped shallots into the salad mix and toss very well.
Plate each salad with a base of the biggest red beet slices overlapping each other (like collapsed dominoes) in a circle. leaving a small hole in the center.
Cut the rest of the beet slices into quarters and build a pile of beets in the center of the circle of beet slices, as in the photo.
Top them off with bits of goat cheese, chives, some fresh basil, making sure to get some around the middle, and you are ready to enjoy your red beet salads!
