Free Tomato Salad Recipe for Two from Healthy Is Wealthy Living!

Roasted Portobelo Mushroom Tomato Salad Recipe with Goat Cheese is the 2nd in a collection of free online recipes now being presented at Healthy Is Wealthy Living, courtesy of Nidia DeSousa.

ROASTED PORTOBELO MUSHROOM TOMATO SALAD TOWER

4 Medium Sized Portobelo Mushrooms

2 Red Tomatoes in 1/4" Slices

4 Goat Cheese 1/4" Slices

(cut cheese with plain dental floss)

Balsamic Vinaigrette Recipe - (text link below)

1 Pack of Edible Flowers, 1 Bunch of Basil Leaves, 1 Red Lettuce and 1 Watercress.

Have ready a few sprigs of watercress, basil leaves, red lettuce leaves torn into large size pieces and the slices of goat cheese.

Clean the portobelo mushrooms, remove the black fins, brush with olive oil, salt, pepper and then roast in the oven for about 15-20 minutes at 330 degrees F, or until soft to touch.

Now start to build a base of Watercress, basil leaves and torn red lettuce pieces in the center of each plate!

Use the goat cheese and tomato slices to divide each layer as you build the tower salad upward!

Finish the top layer with basil leaves and portobelo mushrooms!

Drizzle some of the balsamic vinaigrette lightly around the base of the tower salad on each plate and finish off with a sprinkling of edible flowers for decoration!
