Roasted Barley Salad Recipe For Two!
This Roasted Barley Salad Recipe is the newest recipe from the Healthy Is Wealthy Living Collection of "Free Salad Recipes."
BARLEY SALAD RECIPE FOR TWO INGREDIENTS AND PREPARATION
1 Cup of Barley, 1 Half Cup of Diced Yellow Peppers, 1 Quarter Cup of Diced Red Onions, 3 Sprigs each of Fresh Basil & Thyme, 2 Green Onions Chopped, 2 Cloves of Fresh Garlic, 1 Head of Roasted Garlic*, 8 Cherry Tomatoes, 1 Quarter of a White Onion,1 Bay Leaf, Extra Virgin Olive Oil and Red Wine Vinaigrette* for Salad Dressing.
Begin preparation by spreading out the barley on a baking tray to roast in your oven for 15 minutes at 350 degrees F. until golden brown in color and allow to cool.
*Roasted Garlic: First cut off the top of the garlic head. Next wrap in foil with a drizzle of extra virgin olive oil, salt, pepper and 1 small sprig of fresh thyme. Place in the oven to roast for 15 minutes until soft and golden in color.
Now place the roasted barley in a pot with 3 cups of water (or chicken stock - optional) along with 2 sprigs of fresh thyme, 1 bay leaf, 1 quarter of a white onion and 2 cloves fresh garlic.
Cook at medium temperature on your stove-top element until tender to the bite. When ready, strain away the water (or chicken stock) and cool on a baking tray. It’s ready to add to your salad.
ROASTED BARLEY SALAD PREPARATION AND ASSEMBLY!
Cut the cherry tomatoes into halves, dice the yellow peppers for half a cup, dice the red onions for a quarter of a cup, chop the fresh thyme, green onions and separate the basil sprigs into leaves.
In a bowl, place the barley, chopped thyme, diced red onions, balance of roasted garlic cloves, cherry tomatoes, basil leaves and chopped green onions. Mix well, add red wine vinaigrette (recipe below) to your taste, toss and serve.
To decorate, garnish the top of each roasted barley salad with herb seedlings of your choice. It makes both a healthy and delicious salad serving for two persons.
COMPLIMENT YOUR ROASTED BARLEY SALAD WITH THIS QUICK AND EASY RED WINE VINAIGRETTE RECIPE!
2 Tbsp Chopped Fresh Basil, 1 Tbsp of Chopped Shallots, 2 Tbsp of Lemon Juice, Salt & Black Pepper, 3/4 Cup Olive Oil and 1/4 Cup of Red Wine Vinegar.
Mix in a blender, 1/4 cup of red wine vinegar, 1 tbsp of chopped shallots, 2 tbsp of lemon juice, salt and black pepper to your taste. With the blender still running, slowly add the 3/4 cup of olive oil and the 2 tbsp of fresh, chopped basil.
Pour ingredients into a squirt or drizzle bottle and your ready to use with a salad or two!
