CRANBERRIES VINAIGRETTE SEASONAL SALAD

RECIPE INGREDIENTS
1 Cup of Cranberries Juice, 1/3 Cup of Orange Juice, 1 Tbsp. of Orange Zest, 1/4 Cup of White Wine Vinegar, 1/3 Cup of Sun-dried Cranberries, 1/4 Cup of Reduced Cranberries Juice, 1 Tsp. of Dijon Mustard, 1/2 Cup of Lemon Juice, 1/2 Tbsp. of Salt, 1/2 Tsp. of Ground Pepper and 2 Cups of Canola Oil.

CRANBERRIES VINAIGRETTE RECIPE
In a Blender, add Reduced Cranberries, Orange Juice, Soaked Cranberries (Soak Cranberries in Juice for 2 hours), Vinegar, Dijon Mustard, Lemon Juice, Canola Oil, Salt and Pepper. Add the Canola Oil slowly with the blender running, then add the Reduced Cranberries. Let it Reduce more until it thickens. (Reduce to Half)
SEASONAL SALAD INGREDIENTS
1 Bunch of Watercress, 1 Bunch of Baby Spinach, 1 Bunch of Baby Arugula, 1 Head of Raddiccio, 2 Oranges and 1 Head of Frisee (the white part only).
ROASTED BARLEY SALAD RECIPE FOR TWO!
CANDIED PECANS and/or WALNUTS INGREDIENTS
2 Egg Whites, 1/4 Cup of Icing Sugar, 2 Tsp. of ground Cinnamon, 1/2 Tsp. of Nutmeg, 1/2 Tbsp. of Vanilla Extract, 1 Tbsp. of Orange Rind Zested, 1 Tbsp. of Fresh Orange Juice, 1 Tsp. of Canola Oil and 3 Cups of Pecan and/or Walnut Halves.
CANDIED PECANS and/or WALNUTS RECIPE
Whisk egg whites until it frosts and turns thick. Add Cinnamon, Nutmeg, Sugar, Orange Juice, Orange Zest, Canola Oil and Vanilla Extract!
Continue to whisk well, then add the nuts to the mix and finish mixing very well again!
Spread the nuts on a tray covered with parchment paper! Bake at 280 degrees for 10 Minutes or until the nuts are dry and roasted! You’re Done!

CRANBERRIES VINAIGRETTE SALAD LAYOUT
Arrange the Spinach, Raddiccio, Watercress and Frisee in the center of a Dinner Plate, and place the orange segments evenly around the greens!
Spread the Sun-dried Cranberries on top and around the salad! Now place your selected nuts on the Salad!
From a sauce bottle, squeeze the Cranberries Vinaigrette drizzle over the Salad and artistically around the plate!
