width: 250px  height: 192px  Nidia's Roasted Potato Salad Recipe for 2 NIDIA'S ROASTED POTATO SALAD RECIPE FOR TWO!

INGREDIENTS: 10 Small New Potatoes (red or white skin), 1 White Onion, 6 Thick Slices of Smoked Bacon, 1/2 Cup Pitted Black or Green Olives, 5 Cloves of Sliced Garlic, 4 Sprigs each of Fresh Thyme and Fresh Parsley, 1/8 Cup Extra Virgin Olive Oil and Sherry Vinaigrette for the Dressing.

Preparation: Begin by cutting the potatoes into quarters lengthwise. Season with salt and pepper to your taste and add 1 tbsp of extra virgin olive oil.

Mix well in an oven-safe dish big enough to stir all the ingredients comfortably and include 3 sprigs of fresh thyme to cook with the mix.

Then place in a an oven to roast at 350 degrees F. for about 15-20 minutes.

Have ready the olives cut into halves, diced onion, sliced garlic (you may use a mandolin if you have one for slicing the garlic), thick bacon cut into large slices and use 1 sprig of fresh thyme chopped up for garnishing the salad later.

When the potatoes are half cooked (after about 8-10 minutes), add the bacon, onion, garlic, toss well into the mix and allow to bake until the potatoes are a golden brown in color.

Now mix in the olives and let cook for another 5 minutes. Remove from the oven and allow all the ingredients in the roasted potato salad to cool.

Decorate with fresh parsley sprigs, add about * half of your sherry vinaigrette mix as dressing (see recipe below) and sprinkle on 1/2 tbsp of the chopped thyme per serving for the garnish.

Makes a healthy delicious serving for two persons.

QUICK & EASY SHERRY VINAIGRETTE RECIPE!

1/2 Cup Olive Oil, 2 Tbsp Sherry Vinegar, 1/2 Small Shallot Diced (or small onion)

Mix briskly the sherry vinegar and diced shallot together with a whisk in a bowl. While still mixing, slowly add in the 1/2 cup of olive oil and season with salt and pepper to your taste!

* Store the excess sherry vinaigrette in a glass or squeeze bottle for use with other salad recipes.



width: 2409x  height: 194px  Nidia's Oregano Cucumber Salad Recipe for Two! NIDIA'S OREGANO CUCUMBER SALAD RECIPE FOR TWO!

INGREDIENTS: 3 Medium Sized Tomatoes in Thin Slices, Kosher Salt and Ground Black Pepper, Fresh Oregano Sprigs for Garnish, Oregano Red Wine Vinaigrette (please see recipe below), 1 Cucumber in Thin Slices and 1 Cup Feta Cheese

On two plates, arrange individual layers of tomato and cucumber slices alternating them in a circle, leaving the center empty.

Next, overfill the empty centers on the plates with feta cheese, finish the layout with oregano sprigs on top as in photo above.

Take the vinaigrette and drizzle over salad to your flavor, and finish off with a sprinkling of kosher salt and ground black pepper.

OREGANO RED WINE VINAIGRETTE RECIPE FOR OREGANO CUCUMBER SALAD

2 Tbsp Chopped Fresh Oregano, 1 Tbsp of Chopped Shallots, Fresh and Dried Oregano, 2 Tbsp of Lemon Juice, Salt & Black Pepper, 3/4 Cup Olive Oil and Red Wine Vinegar.

In a blender, pour 1/4 cup of Red Wine Vinegar.

Then take 1 tbsp of dried oregano, rub in your hands to release aromatics and place in blender.

Next add 1 tbsp of chopped shallots, 2 tbsp of lemon juice, salt and black pepper to your taste.

With the blender running, slowly add the 3/4 cup of olive oil and 2 tbsp of fresh chopped oregano.

Pour ingredients in a squirt bottle and your ready for the salad.
